Irrespective of regulatory references, each ham is identified under the ‘Jambon noir de Bigorre’ designation of origin by means of an abattoir number ink-stamped on the rind, the week number and last digits of the salting year branded on the rind, and the acronym ‘NB’ heat stamped onto the rind, at the base of the trotter.

Indépendamment des mentions réglementaires, l’identification du jambon en appellation d’origine «Jambon Noir de Bigorre», réalisée sur chaque jambon, est constituée du numéro de tuerie apposé par tampon encreur sur la couenne, du marquage au fer chaud sur la couenne, constitué du numéro de la semaine et des derniers chiffres de l’année de salage, et du sigle «NB» inscrit par brûlage à l’aide d’un sceau sur la couenne à la base de la patte.
