Syringasäure (Nachweisgrenze: 6 ng) wurde nur in der Cencibel-Sorte nachgewiesen und Isorhamnetin wurde nur in der Airen-Sorte am Ende der Reifungszeit identifiziert. Die Bestimmungsgrenze liegt bei 25 ng.
